Beef Patty with Bacon & Sweet Potato Salad

Directions
To make patty combine mince, tomato paste, crushed garlic, dried parsley, onion powder, salt & pepper. Mix well. Press into a tight ball & slightly flatten to make a patty. Place in the refrigerator while preparing the other elements. This will help the patties stay together when cooking.
Peel & cube sweet potato. Steam until tender - quickest way is in the microwave. Remove & drain.
Cut cucumber how you like.
Finely slice red onion.
Dice bacon.
Fry bacon in a hot pan to your liking. When done, remove from pan.
Combine sweet potato, bacon & red onion. Toss together.
Using the same pan as bacon, add oil when hot. Cook patties for approx. 4 - 5 mins each side, or until cooked through. Try to only turn once.
Place rocket & cucumber on plate along with sweet potato salad.
Serve patties & pour over balsamic as dressing.
